食用になるのはオニユリ・ヤマユリ・コオニユリです。
独特の香り、ほんのりとした甘み、ほろ苦みがあり、食感はホクホクもっちりとしています。
関西では茶碗蒸しや含め煮、梅肉和えなど和風料理やお正月料理の食材としてよく使われます。
鱗片を一枚ずつはがして水洗いをして調理します。
糖質を多く含むので、野菜としてはカロリーが高くカリウムも豊富で滋養強壮によい食品です。
