一年中食べられる缶詰や水煮とは違い、旬の新鮮なものはホクホクとして甘みがあります。
乾燥に弱く、すぐに風味が落ちるのでさやごとポリ袋に入れ冷蔵庫で保存します。
調理の直前にさやから中の豆を取り出し、沸騰したお湯に塩少々で2～3分茹でます。
茹であがった豆は、急に冷やすとシワがよるので、茹で汁に細く流水をしながらゆっくり冷やします。
