コールラビの語源はドイツ語で、コールは「キャベツ」、ラビは「カブ」を意味します。
風味はキャベツに似ていて、果肉は白色。カブよりもシャキッとした歯触りです。
生のままスライスしてサラダや浅漬けに。また、ポトフなどの煮物や炒め物など、クセがないのでいろんなお料理で食されます。
