										<content:encoded><![CDATA[<p>日本各地の山野に自生する多年草で、その新芽を食します。<br />
本来は自生の野生種を［山うど］、光を当てずに栽培（軟化栽培）したものを［うど(軟白うど)］と呼びます。<br />
しかし市場では、軟化栽培したものに、出荷前に日光を当てて緑色になったものを［山うど(緑化うど)］と呼び、野生種とは別のものになります。<br />
軟白うどに比べて、香りや風味が強く、苦みやアクも多くなります。<br />
自然の味を好む方におすすめです。<br />
最盛期は３月です。</p>
<p>信州産山うど等山菜を含めたセットを2023年より通販サイト信濃ノ國屋で扱っております。<br />
