可食部は土から30cmほどの根元が筍のように肥大化した部分になります。
中華料理では良く使われますが、まだまだスーパーでは見かけることの少ない食材です。
筍やアスパラのような食感で、アクがなく食味が良いです。
表の皮を剥き、サッと茹でて酢みそなどで食されます。
また、油との相性がよいので、炒め物や天ぷらに良く合います。
