刺身のつまや料理のあしらい、香りづけに用いられます。
木の芽をすりつぶして味噌とあえて「木の芽みそ」。細かく刻んで魚の上にのせて焼くと「木の芽焼き」などになります。
お吸い物や煮物のあしらいとして、香りを楽しむ場合は、手のひらにのせて軽く叩くと、葉脈が傷ついて香りが出ます。
