The post 紀ノ川柿 first appeared on 丸友中部青果.]]> 「紀ノ川柿」とは、和歌山県に流れる紀ノ川沿いで栽培されている「平核無柿(ひらたねなしがき)」の事で、渋抜きを収穫前に樹上で行う種無し柿です。
渋抜き方法は、色づき始める前に、柿一つ一つに固形アルコールの入ったビニール袋を被せて、丸一日程度おいてから、袋の下半分を切り取って、柿が色づくのを待ってから収穫をしています。
樹上でじっくりと完熟させるので、平核無柿よりも甘みが強く、色鮮やか。黒砂糖が入ったような果肉に仕上がります。
完成までに手間暇がかかるので、流通量が少なく、「幻の柿」とも呼ばれています。
