小梅には、山梨県栽培の「甲州最少」と長野県栽培の「竜峡小梅」などの品種があります。
梅酒やシロップには青いもの、梅干しには黄色に完熟したものを使います。
未熟な生の青梅には中毒を起こす有害物質が含まれている場合があるので、生食は避けます。

緑色の青梅から完熟させると黄色味を増し、日光がよくあたると鮮やかな赤色の「紅梅」になります。
梅干し用の梅は完熟で収穫し、水洗いをして塩で漬け込みます。
採れたての完熟梅は甘酸っぱいフルーティーな香りがします。
