収穫後、すぐに出荷しているので水分が豊富で柔らかく甘みが強く辛味が少ないのが特徴です。
鮮度の良いものは水にさらさなくても、スライスにして生で召し上がれます。
火の通りが早いので、炒め物や煮込み料理に使う時は火加減に注意が必要です。
