扁平で黄色い薄い皮をしています。
収穫後、すぐに出荷しているので水分が豊富で柔らかく甘みが強く辛味が少ないのが特徴です。
鮮度の良いものは水にさらさなくても、スライスにして生で召し上がれます。
火の通りが早いので、炒め物や煮込み料理に使う時は火加減に注意が必要です。

国産では「湘南レッド」「アーリーレッド」が代表品種です。
一般のたまねぎに比べて、甘みと水分が多く、辛みや刺激臭が少ないので生食に向いています。
薄くスライスしてサラダや酢のもの・和えものに用いられます。
赤い色はアントシアニンで、酸味を加えると鮮やかさが増します。
