The post アスパラガス first appeared on 丸友中部青果.]]> ヨーロッパ原産、ユリ科の植物で、江戸時代にオランダから観賞用として入ってきたものが、明治のころから食用に導入されました。
食べている部分は新芽の茎。土寄せなどをして日に当てずに育てた（軟白栽培）ホワイトアスパラガスと、日に当てて育てたグリーンアスパラガスとがあります。
国内では北海道・長野県・佐賀県が主産地で、秋以外は国産のものが流通しています。

表面の紫色にアントシアニンを含んでいます。
グリーンアスパラに比べ少しやわらかく甘みも強いのが特徴です。
紫色は加熱すると濃いグリーンに変色してしまいます。
紫色のまま食べたい場合は、生のまま食べると良いでしょう。
