ごぼうに形が似ていることから「山ごぼう」と呼ばれ、別名「菊ごぼう」「アザミごぼう」とも言います。
一般的には味噌漬けなどで見かけますが、長野県や東北地方などの産地では野菜コーナーで販売されています。
白くて細く長さは20cmほど。特有の香りがします。
ポリポリとした歯ごたえの良い、独特の食感が味わえます。

The post 村山早生牛蒡【信州の伝統野菜】 first appeared on 丸友中部青果.]]> 秋まき夏どりの早生種牛蒡（むらやまわせごぼう）。普通の牛蒡に比べ灰汁が少なく、白いのが特徴。ビタミンB群やビタミンEなどが含まれており、特に食物繊維・ミネラルのほか、ポリフェノールも豊富に含まれています。
キンピラ、煮物、天麩羅、味噌漬に最適のほか、須坂市名物の「みそすき丼」にも使われています。
